Kosher WHAT???

I'm dumbfounded to read this report from New York.

A New York restaurant said the city's first kosher tequila arrived at the eatery just in time for Cinco de Mayo.

Restaurant Tequilaville said Kosher Tequila Agave 99 is being served for the first time in the city Tuesday as part of the Mexican independence celebration, the New York Post reported.

"The OU (Orthodox Union) seal is on every bottle," Martin Silver said. "We've invited people from the Mexican Embassy and asked a few religious leaders to show up."

"You know the song 'Hava Nagila'? We're saying Have a Tequila," he said.

Kosher Tequila? How on earth do they establish its 'kosherness'? Do they circumcise the blue agave plants before harvesting their cores, from which the tequila is distilled?

On the other hand, I can imagine the examining board that certified the tequila's 'kosherness' were probably very thorough in their . . . ah, testing of its ritual purity. I wonder how many bottles cases were required?

What confuses me is not the notion of kosher tequila but wanting to have a Cinco de Mayo kosher celebration. Mexican independence strikes me as having been every bit as historically important to the Jewish community as Chinese astrology.
