To my utter disgust, this video shows a teacher explaining to schoolkids how the various parts of a chicken are used . . . including a graphic demonstration of precisely how chicken nuggets are made.
After watching that, I'm certainly never ordering chicken nuggets again!

That's a partial lie - they do not use the bones. All processed meats are like sausage - it tastes really good, and if you are really squeamish, you don't really want to think about how it's made. They are designed to capture everything edible and make sure no food goes to waste.
ReplyDeleteIf you want to be squeamish, heck, think about beer and cheese. You're eating the squeezings of rotten grain or the curdled parts of rotten milk? Ewwww. But tasty!
Things get way worse when food (of any sort) gets inside us.
ReplyDeleteWe do not eat food. Period. We eat to feed the bacteria in our guts that convert "food" to what we CAN eat.
The majority of the weight of our poop is actually dead bacteria from all that processing.
That's just how it is.
Pass the hot wing sauce for my nuggets, please...

I don't care for chemicals and stabilizers, but there's NOTHING wrong with the rest.
ReplyDeleteThe teacher calls the meat left on the carcass "horrible" among other things. Ridiculous!
Does this mean that if a piece of meat was on the left side of the knife blade, and came off with the breast, it is OK but, if it was on the right side of the knife blade and was left with the ribs, it isn't?
This teacher had a real "axe to grind"!
In most parts of the world, people eat the WHOLE animal with pride. Here in the english speaking world, we like to pretend that we don't. Surely people like that teacher don't think we're so stupid as to believe that the rest gets thrown away.
Apparently, he wants us to be so removed from reality that we can afford to be squeamish about such things!
Don't have a problem with taking advantage of the whole carcass and eating as much as possible from it.
ReplyDeleteI do have a problem with the other chemicals and powders and hydrogenated fats used to fry these and give them the nice "golden" look.
That's why I never eat any fried food where I can't readily identify its shape and origin. That includes nuggets and just about any other processed "squares", "rounds", non-smoked sausages, etc.
Must be working: I'm 56 and the quack reckons I have the heart and blood pressure of a 25 year old...

Oliver is a professional chef and should damn well already understand that using the carcass after the big pieces of skeletal are off it is standard and not a nefarious fast food trick- in a restaurant kitchen it would likely go to be turned into stock, and properly made stocks are one of the big differences between restaurant-quality food and most home kitchens.
ReplyDeleteWe eat the skin as the best bit when we roast or fry the chicken but because it's been through the blender it's icky? Good grief!
Not a fan of the extras- real food goes bad quickly, it's just the way it is- but good lord we've gotten bizarrely squeamish about where our food comes from. A hunter gatherer that only ate the skeletal muscle would die of malnutrition...
IF Oliver had presented this in anything even vaguely resembling an intelligent and educational way it would have been a great thing for these kids to see. But he muffed it entirely.
ReplyDeleteI have several friends who raise their own meat animals and their kids love and respect the cute lambs, calves, piggies and chicks that spend a few months at their homes. They also love the meat their temporary pets provide.
Much of our society has, IMO, utterly neurotic and wrong-headed ideas about meat products. Most people today prefer to let animals be raised in crowded, filthy, inhumane conditions so they can avoid having to think about the idea that meat comes from dead animals.

I didn't use a processor, but this weekend's chicken carcass went into the freezer to be used in future culinary arts.
ReplyDeleteThen again, I cut whole primals and grind my own fresh meats and sausages right in the kitchen; and I quiz my four younglings about the origins of their foods (animals and plants) while I do it. Mostly, they just want to help 'cause they think it's neat.
Reminds me, I need to sharpen my knives.
