Peter, The meme re: tongue ... for the last couple of weeks I've been on the hunt for authentic "Jewish deli" style pickled tongue. Most of the delis in my area stopped carrying it .. too expensive, too much waste, too little demand. Blah blah blah. I finally found some (Kaufman's Deli, Dempster Street, Skokie, IL). It was worth the wait. My great uncle never touched the stuff - he refused to eat something from a dead animal's mouth. Yup, he ate eggs !! Oh, and when I'm in the mood for tacos, there's a place near me that makes authentic lengua tacos. Hmmm .. tongue !!!
