I've long enjoyed the music of French singer Mireille Mathieu. Her life story is very inspiring, a true rags-to-riches tale, and she's been popular both in France, her home country, and around the world for more than 50 years.
Here's an album of 19 of her songs, to illustrate her prodigious output. She's recorded close to 100 albums over the course of her career.

Nice voice indeed, but this recording is badly marred by overzealous orchestration, grating guitar accompaniment, and less than wonderful recording techniques. I hope she had better studio sessions on other albums.
